Vegetable Quesadilla


  • Onion
  • Garlic
  • Mushrooms
  • Zucchini
  • Carrots
  • Sweet peppers
  • Salt & pepper
  • Coconut oil or butter
  • Flour Tortilla
  • Cheese
  • Oregano


Chop the vegetables into small pieces.  Sprinkle with salt and pepper.  In a skillet, melt a little coconut oil or butter and saute the vegetables until softened.

Sprinkle a dry skillet with oregano.  Place a flour tortilla on skillet, top with sautéed vegetables and cheese.  Fold it in half and cook a couple minutes on each side.
