Vegetable Burgers – great for grilling or making a “traditional” burger

Ingredients

  • 1 small butternut squash (if time roast ahead of time -- its easier!)
  • 1/2 head of cauliflower
  • 1/2 cup of mushrooms
  • 1/2 cup hemp seeds
  • 1/4 cup sunflower seeds
  • 1/4-1/2 of onion, chopped
  • 1 egg
  • 1/2 peice of organic sourdough bread toasted extra toasty and crumbed in a nutribullet or similar OR 2 TBSP Panko

Instructions

This is a very fun recipe to make with friends.  It is easy to make but has a couple steps to it which make it a fun recipe for cooking together.

Cut squash in half and roast for 1 hour or until soft at 350 degrees.

Steam cauliflower, and sauté mushrooms.

Combine your seeds, any combination of any nuts and seeds will work, but seeds seem to work better in a “burger”.

Mash steamed cauliflower and squash together and stir in mushrooms, nuts and seeds, onion, breadcrumbs and egg.

Make into burgers and grill or fry as usual. 

This is very good topped with cheese as a cheeseburger.

This recipe is from my cousin, Cindy 🙂  We had a nice evening cooking together, this is one of the dishes we made.
