Kidney Bean Burgers

Ingredients

  • 1-1/2 cups kidney beans -- soaked, boiled, and drained OR canned and rinsed
  • 1/2 cup pecans, broken up
  • 1/2 onion, chopped
  • 1-2 cloves of garlic, crushed
  • 1 egg
  • 2 TBSP of flour -- your choice, I used organic wheat flour
  • 1-2 TBSP chopped parsley
  • 1-2 tsp mustard
  • chili powder to taste
  • 1-2 tsp cumin powder
  • Salt and Pepper to taste

Instructions

Mix all ingredients together in a bowl.  Form into patties and fry in oil.  I fried my in a combination of coconut and olive oil.  

These fried up and stayed together in a solid burger nicely!
