- Coconut oil
- 1 large sweet onion
- 2 tsp cumin
- 3 sweet potatoes, cubed
- 1-1/2 qt. chicken or vegetables stock
- 1-3/4 cup plain yogurt
- 2 TBSP fresh parsley
- 1/4 cup pumpkin seeds, toasted
Sauté onions and cumin in coconut oil. Add potatoes and broth, bring to boil, reduce heat and simmer 20-25 minutes.
Puree soup with yogurt and parsley.
Serve with a dollop of yogurt and sprinkled with pumpkin seeds.
