Coconut Poached Ono in Cilantro Lime Rice

Ingredients

  • 1 piece ono or any white fish
  • 1 TBSP coconut oil
  • 1 can Coconut Milk
  • Scallions, sliced
  • For the Rice:
  • 1 cup Jasmine Rice
  • Juice of 1 lime
  • Big Handful of Chopped Cilantro

Instructions

Cook your rice according to directions, after fluffing it and letting it rest stir in lime juice and cilantro.

In a small skillet or pot add coconut oil and heat, then add coconut milk and bring to a soft boil.  Drop in fish — I like to cube it first or right after I drop it in.  Boil for just a few minutes stirring gently constantly.  Turn off, remove from heat and let sit.  Stir in scallions.

Put rice in the bottom of a bowl, add fish and spoon coconut milk over with scallions.  Top with salt — I like to top it with black lava salt.
