Avocado Pesto

  • 2 ripe avocados, halved, seeded, peeled
  • 1/2 cup basil or cilantro
  • 2 to 4 cloves garlic
  • 1/2 fresh squeezed lemon juice (about 2 TBSP)
  • Extra virgin olive oil
  • Salt & pepper


Combine all ingredients except the olive oil in a food processor. With the motor running, add olive oil in a slow stream until emulsified.

Serve over pasta with olives.
